We always use Bite. It's a stable service and top-ups are available almost everywhere. Their coverage is almost 100%.

I used Ežys, which is a brand of Omnitel, with a range of useful plans for a few Euros a month

I was there a few weeks ago. I used Ežys again. A promotion in conjunction with Maxima supermarkets offered a SIM for €1.59, including 100 minutes of local calls some text messages and 500 MB of data. And €1 of credit. I think that offer has now ended, but there may be similar ones.

Do any Lithuanian SIM cards remain valid with only periodic balance deductions? Most seem to require periodic balance increases (i.e. top-ups), which is not viable for an occasional visitor.
