I was wondering does anyone know which sim would be best coverage ways for traveling around on the swiss rails

Probably SwissCom. For a long time they were the only game in town.

All Swiss operators have quite a good coverage, surely Swisscom has the best one, but I could suggest Orange as well, also for UMTS network. Sunrise seems to be a bit worse than the other 2.
